I have no experience with this, but I did used to blow out eggs for Easter when I was in school. My neighbor was a great painter, and if we gave her egg shells, she would paint scenes on them for us. My brother still has a goose egg she painted for him, it's beautiful.
Anyway, the easiest way we found to make the egg shells not crack and last is to use a knitting needle to poke a hole in the shell. It also worked the best with the freshest eggs I could find.
If I were trying, I would par cook the rice - cook it about 1/2 done, then mix with some of the egg, and fill the shells about 1/2 full and cook the rest of the way.
